Proper response to e6 is d4, the French Defense. I think you had wonderful chances before the blunder, with the two-piece advantage. Also, it is not counter-productive to study wins. You should study every game, even wins, to see not only what needs to be improved, but also what you did well so that you can keep doing what was good.

This is a game I just played, that I won due to a huge blunder (see annotation). Can anyone help me analyze how I could've won this game from good, solid, play?
I know it seems a bit counter productive to analyze won games, but I feel like if my opponent had made the correct moves, throughout, I would've lost.
What do you think?
