So now we'll find an appropriate opponent for him.

You can choose the rating range.

There are more lower rated players with the rating range set higher, so you're more likely to be paired with someone in that rating range. 

To be fair, taking my performance as a whole, the pairings are amazingly appropriate.

But if there were a mechanism for looking at only the last 10 or 20 games, the pairings would be very different.
