A move is something like f4 or Ng5. What's the longest one you can think of? I though of: fxg8=Q#.

You mean the longest notation? We discussed this a while back and yes, the pawn capture-promotion-check is one of the longest pieces of shorthand notation possible, with 7 characters. It is tied with Nd1xc3+

^ Nd1xc3+ is possible if there are three knights on the board. With a couple more pieces we can make it a more satisfying Nd1xc3#

I recall someone castled queenside with a rook on a board next to them at a tournament, in lieu of his own captured rook. Depending on how far apart the boards were this may be the longest move.

It wouldn't be Nd1xc3+. It would only be Ndxc3+ If there is another knight on the board that can get to c3. You would have to specify which... Actually, it can be Nd1 if there is a knight on d5. Good point!
