Don't open with 1. e4. Problem solved.

Change it up instead of playing e4 first play Nf3 and if anything that allows e4 immediately play e4

1.e4 d5 2.ed5 Qd5 play my favorite 3, c4! it aint weak but it aint strong either the plan is to develop pieces and getting hold of the center. Delaying d4 at an opportune time.

Surprising the opponent is easy but doing it successfully is another matter.

If your goal is merely to surprise your opponent just try to confuse yourself

and surprising your opponent will be an automatic after effect.

This is very risky but it is one approach in any event.
