Are Gambits Worth It?

We've gotten a little off topic (as you would expect) .... are gambits worth it? Some are ... and the only thing you should fear is the player willing to throw it back in your face with a counter initiative (not to be confused with returning the material); or attempt to lock you down and patiently wait for you to bash your head on the table, such as in the Epishin variation of the Benko (the later being very tough to pull off though - would you be able to defend accurately for 20+ moves and launch a counter attack at just the right time?)

I take it that this is the King's Indian Saemisch gambit that was mentioned earlier.  Wow!  200+ GM games and pretty good results by black.

And I take it that this is the Petroff gambit that it is better for white not to accept:
