I am talking specifically in rapid games, are notes allowed for say openings, since you can't just branch out and memorize everything right away and have to memorize while playing?

No.  You cannot use any reference materials when playing Live chess games (bullet, blitz, rapid).

  • You may use Opening Explorer or other books without engine evaluations in Daily chess only (not in Online / Live play)

Alright, thank you this is good to know. I'll only use my notes on daily then... is that allowed? I know that I can't use an engine, alternate person, analysis bot, etc but notes are allowed for daily chess, correct?

Correct - you can take as many notes as you want for Daily chess.  In fact, the browser client has a tab for Daily games where you type in notes and save them.
