WEll e5 is probably the best based on its record but c6 is one tough game.  I venture with c6 at times but my main defense to e4 is c5 and usually the schevenigen

1...c6 for me personally.

1...c5 has the best results, but you have to be more booked-up than 1...c6, which allows Black to develop is pieces quickly and make threatening moves, yet play relatively safe so I like the Caro-Kann, 1...c6
