Could anyone tell me why the Blitz game is one of the most popular games that players enjoy? I don't get the logic that is involved. A win, in my eyes, is just pure coincidence under pressure.

Blitz is in a different class of chess. Not serious chess, just something to enjoy.

I just don't get it. It's like being asked to complete a maths test in a third of the time available to you. It gets sloppy.

Yes, I get more enjoyment out of studying a chess book than playing blitz.

It's fun, and you get to try out stuff (openings, your instincts in certain middle game, attacking, sacrificing, or endgame situations) without paying "a high price". 

It's fun, so long as you aren't around people who take themselves seriously. Then the fun is gone :-)

It isn't to everyone's taste, of course - but that's all right. Chess is rich enough to provide something for everybody (everybody who likes chess, that is).

You can play 10 blitz games in the place of 1 standard game

It's alien to me. It defeats the object of chess as far as I'm concerned. Blitz is nothing to be proud about.

Yes.

But more like a maths test where you only solve the even numbered questions, and must wait after every question for your partner to answer an odd number.

If the problems are very simple to you, it's no fun waiting for your partner.  With a good partner it can be fun solving simple problems quickly and catching each other's mistakes.

Of course it's also rewarding to exert all your energy trying to solve a difficult problem.  That's like tournament chess.
