can anyone explain this solution to me in more detail?

in the mammoth book of chess by graham burgess there is a 25 trickier mates in two section. No.20 doesnt make any sense to me.

if anyone has the book can they explain why when the night moves to g4 why the pawn can't capture it

Because the black pawn doesn't move that way. It is moving towards the black king and the first rank.
