What qualifies as a proper word?
Players (GMs included) have been known to change their openings and even styles over time.
If you mean is playing an opening you have played many times before boring, then yes and no. Professional players will say of irregular openings "we started playing chess early." It's not so much they're board in the opening, they make a distinction between their preparation and their play.
If you think that may be boring, imagine it like setting up a story. The GM knows the opening, but once the story of the position has been set up with the opening, they're excited to see how it will resolve.

No, they would get killed playing the same moves over and over. The ones who do that are called "amatuers."
