Engines aren't designed for impossible positions
The move you are looking for is Bb1a1.
This is a Stockfish 11 "feature".
I don't think @Martin_Stahl is correct in saying the engine is not designed to handle impossible positions, rather the programmers screwed up. It works fine with Stockfish 15.
Your second mate in 1 is Bb1b2, by the way.

That's not a legal move
@Martin_Stahl
Didn't say it was. It's still SF11's mate in 1 - look at the output.
Here it is again in Arena, but Arena refuses to play the move because it thinks SF11 is cheating.
Maybe it decides if you're going to give it an illegal position it's going to give you illegal moves.

Feel Free to inspect the board class using the inspect of Computer Science.
By This Way, you may be able to do it, not even Chess engines can do this.

White takes the knight then promotes pawn to queen
Has to be a mate in 1
If White also takes the knight, this will end up in a draw, Several Bishops, Even through X-Ray, Control h7, The King Controls other escape squares.
White takes the knight then promotes pawn to queen
Except if he takes the knight immediately the game's already over. You've got to shuffle a few bishop's out of the way of h7 first.
