can you win but not take any pieces

Likely only in case your opponent is "helping you out" somehow.
The Fool's Mate is an example of a win with no pieces captured.

Like when Magnus Carlsen resigned on move 2 in an infamous game.

You can checkmate without either side taking pieces in the two-move checkmate. That is white f3 then black e4 followed by white g4 and black finishing with queen h4 checkmate (one of several variations). If that is what you're asking

Also, I believe there's a few smother mates involving a pin on the king's pawn and a knight on either d3/d6 or f3/f6 that can happen without either side capturing

e4 e5
Qh5 Nc6
Bc4 Bc5
Qxf7#
Qxf7?
If you meant Q⇄f7 swapping the pieces, maybe but that's not allowed.

Not checkmating without taking pieces. Its very rare. However the smother mate is probably the most common checkmate without any pieces being taken

It involves getting the queen out to pin the king pawn to the king then checkmating with the knight after the opponent traps their king with their own pieces

You can't open the e-file without captures. Fool's Mate is the most common.

You don't have to but that's a good point. You would have to push the e pawn one forward and then get your queen in front which is possible without takes. (for example pawn e3 then something like Qe2, Qd3, Qe4)

You can, but the problem is your opponent is not gonna let you play those moves and probably play 1...e4. So it is not close to being most common. Fool's Mate is way more commoner in the lower levels.
