Chess question

So I know that when black and white castle on opposite sides it's a pawn race to the other persons king. And I've pushed my pawns like I'm supposed to every time this happens. But more often than not, I see opposite side castleing in a more closed, positional game. There it's a lot more complicated and I can't just push my pawns over to the enemy king. What should I do in this situation? Or do I just ignore that fact and keep playing the game without attacking the king.
