Why is chess spelled with 2 s'es when 1 would work just fine?
I think it's because with one 's' the 'ehh' sound would become an 'e' sound. Or maybe that would only happen with two e's. Im confused now.

I think because it comes from the french word for "checks" which sounds more like "chess" than "ches". There is a prolonging at the end.

Isn't 'ches' a French word that has something to do with restaurants?
Speaking of such, about a year after coming to Thailand, I went into a restaurant that had a 'chess omellete'.
