How do you choose the rating of your opponent? I have tried many times adjusting in the settings

You don't.  Everyone wants to play only opponents of higher rating, but the math doesn't work...wink.png

You can set a certain range but you have to be willing to play someone at least 50 elo points higher or lower than your current one.
