Sicilian is very complicated on higher levels with black, and the scotch with white (im not nearly as good as 2600, but i often watch big chess tournaments)

I'm looking for very deep professional openings. I am prepared to patiently learn them. Could you suggest any courses that I should take? I want them to be deep enough to compete against 2600+ grandmasters. To at least get a good middlegame and early endgame that are at least equal.
I also need to enter middlegames with well-known plans and motifs to reduce any cognitive load during actual competition.
The volume of variations is not a deterrent to me.
