I think he has enhanced my enjoyment of the game so much(from past videos....all free) that he's done enough to be in my personal Hall Of Fame.

I agree. If you’d chosen a career path based upon how a teacher/lecturer enthused your interested in a particular subject they taught, you wouldn’t expect the teacher to thank you for attending their class.

Of course it's up to him. He's the one making the videos. Some could argue just as easily that making a fuss over 100k subs is being egotistical, like showing off that he has that many while most people who post YouTube videos could only dream of it.
Personally I don't hold either opinion. I watch and subscribe to numerous YouTube channels, but I just take them for what they are. Some post regularly, some don't, some give up altogether, some change their content to something that no longer interests me. It can be disappointing, but they don't owe me anything just because I watch their videos.
More and more nowadays people seem to develop a sense of entitlement, that the world owes them stuff for free. Each video from a YouTuber is just its own self-contained contract with the viewer. He/she produces it, you watch it. That's it - everyone's even. They don't owe you anything more, you don't owe them anything more. Maybe they'll produce many more videos, maybe you'll watch many more videos, maybe they/you won't.

It would have taken all of 5mins to make a quick youtube vid. I could even write the script,
"Hey guys, it's John. Just a quick thank you for getting me to 100k subs. Without you guys, I'd be nothing. It's because of you all that chessable got bought by Magnus. You guys are the best. I'm busy just now with the new project but just wanted to post this vid to once again say thanks. For getting me to 100k."

Maybe he's intelligent enough to know he wouldn't be nothing without 100k subs. If someone gets a lot of subs it's because what they do appeals to a lot of people, the effort they put in. A sub is not anything by itself though. I could sub to a channel and then never watch anything on it!
You'll live a life of disappointment if you expect everyone to thank you for every tiny thing that you do that might in some small way affect them.

It is more a thing for the attention whores who eats 10 hotdogs in one minute or fart in public. John is not there to collect followers, there is more substance in his work and I am sure he aim higher and more longterm with his project. Also you never see him begs for likes and subscription..
