Two things which contribute to larger point swings. The larger the rating difference between the two players the larger the point difference. Second and most prominent is the RD factor ( time between games ) The longer the time, the higher the RD. If your rating is solid and you play against someone with a high RD, or high RD and a Large rating difference, then you will see a big jump in rating on their part.

The Rd factor is used to quickly get a player to a trueish rating, hence the large point jumps.

Yes, I don't get it either. I'm new at chess and my current rating is 800 elo. I don't play that often but when I play and I get a win I get plus 50 points to then face people that are way stronger than me. And when I'm losing I also approximately get deducted of 50 points but it's really frustrating to experience such elo jumps. How can I try to reduce this effect ?

Read post 4. Play as close you can every day in each time control. that interests you. Around 20 games you should start seeing smaller gains and losses. If you stop or lengthen the time between games in a time format then the rd factor will become larger with bigger point jumps in that time frame.
