The point is, you need to start these games at around the same time, or else you could be in time trouble.

This is a very well known strategy - in a simul, someone who had little idea how to play chess managed to do very well against 9 masters.
Chess.com only allows multiple games to be played for premium members, however. What you've described does not seem to violate any of the rules, but it's very impractical. You need to first get 2 games, with right colors, against players w/ higher average rating. Not as easy as it sounds!
