Paul Morphy, and other Historical Chess Masters used to give odds when playing weaker opponents. Such as odds of a pawn and a move etc.
How much stronger are you if you can beat someone at odds of a Pawn, a Night, a Rook?
What level of player could a GM beat at each of the above odds?
In the game I reviewed Paul won in spite of playing black and giving odds of a pawn, a rook and a move. So his opponent was up 6 points and had a pawn on d4 and e4 before Paul made a move.
