if you want to play unrated i will. challenge me and pick a pawn. you want to be white? 1 day per move is fine, or longer. whichever.

Why would you want to "Even the playing field?" That's not going to help them get better, and I'd feel a bit insulted if some class C player thought he could take a hopelessly lost position against me and still have a chance to beat me.
My advice is to play them in real games. If you beat them, they can learn from it. If I were to play a GM (probably even more of a rating spread there!) I wouldwant him to play his best so I could learn from it, not play down a piece and "even the competition."

Would this have been your same view when you were starting out at chess - and getting beaten every game?
Something that may be interesting that I thought of - designate one of the lower player's pawns to be uncapturable.
