It has happened, players have died at the chess board, usually from a heart attack.
You get the win.

On July 23, 1933, the Dutch chess master Adolf George Olland died at age 66 of a heart attack while playing white against Hamming in the 1933 Dutch chess championship at The Hague.

Olland played his 25th move, collapsed, his head fell on the chessboard and the pieces rolled off the table.

The Dead Man’s Defense has a long checkered history in correspondence play. When my opponent is dragging things out, I let them know that I am healthy and that only go into rough neighbourhoods fully armed.

He means "get poisoined" btw, I think the game should be a dead draw if your opponent died in OTB tourney.
