Make sure the only way he can take your piece is if he loses the exchange while taking it, or make sure that your pieces cannot be taken easily. Make a sneaky attack, obvious attacks can be avoided at any level.

I have a guy that I play at work. I am faily new to chess and am learning more and more each day.
However, this guy you cannot play any type of standard opening. Why because he just takes pieces pelmell. There is no rhyme or reason to it and it is frustraiting to me.
How do you defeat a player who never plays any sort of pattern. I can't set any type of attack because he will just take the piece even if he will lose his piece doing so.
Any ideas? Other than do not play him :)
