I feel like white would take the f7 pawn with their bishop at my level (1400's) and it would get ugly for black. Is there a good line against that?

Yeah
Taking on f7 is actually quite bad for white because even though the king looks like it's a bit exposed and can't castle, there isn't a clear way to attack the king. And black is also able to get much more space and faster development than white. In fact according to the engine, white is -2.8 after the knight moves

ah. yeah I have a bias towards playing defensively and trying to make a closed position so I think in that situation I've tried to put defenders around the king. The pawn attacks is very effective.
A fun opening is the Scandinavian
do you really consider the scandinavian fun? every time the opponent plays d5 i curse. i think it leads to the most boring games in all of chess
If black castles queenside, yes. If they go queenside it’s not as exciting
