Most people rated 2000 (OTB) can do it. I can do it.
Probably more than 90% of 2200s can do it (and do it easily). Probably most 2200s could play 2-5 games blindfolded at the same time if the opponents were not very strong.
For a grandmaster, playing a single game blindfold isn't impressive at all honestly.
Now, if we're talking about playing 10 or 20 games at the same time all while blindfolded, that's a different story.
On TV it's pretty funny what they're impressed with. I remember an interviewer who was going to "test" Carlsen's memory, seeing if he could recognize a game.
So they showed him a position from... one of his own games. LOL.
Carlsen (and I assume all top 10 players) remember obscure crazy stuff... like games played 100s of years ago in tournaments no one's heard of and it's unimportant to theory, but for some reason they know it anyway 
I’m watching the Magnus documentary on Netflix. He was playing blind as a kid!
