How to deal with bishops sacs and is g5 playable?

Is there a way to deal with the esposed king side afer someone sacs to open it up? I know it depends on the position but I mean in general terms some theme or theory on converting it into an "ok" positoin. And is playing g5 really that bad? Ok I get it weakens the kingside if castled but I keep seeing it recommed in sitations where there is a bishop on g5 pinning a knight. I know if you haven't castled it's ok but what if you have to? HELP!?
