How to defeat a player stronger than you?

First of all by not being afraid of your opponent. Overcoming fear is half the battle. Second is sheer determination to win. Third is never giving up.🐾

Play safely, and wait for a blunder. DO NOT TAKE UNNESSECAY RISKS!!!
That's a good way to lose against a stronger player, since you're much more likely to blunder than they are.

If you really want to bag big game......
Strive for maximum complications so that neither one of you understands the position. Neither one can know the outcome or soundness of a sacrifice. If your opponent feels he must know, he might eat up his clock. So you should be willing to gamble smartly by making risky moves.
It depends on how much stronger than you they are. A player's chances of beating someone 200+ points higher rated are way better than their chances of beating someone 400+ points higher rated.
If it is live chess you won't be able to study your opponent (properly) during the game. If they are someone who plays a lot of live it might be worth nosing through all their past games to see which openings they (seem to) like... then try to aim for something they haven't played much.
It depends where their strengths are though.

If you want to win games against good players, you need to get your tactics right first. Once you are given a position in the middlegame, you should be able to figure out how you should continue. And always look for forcing moves. I got this position from my U15 Boys National Level 2nd round game.
