I like this variation, it's called the Leonhardt Gambit. If they ever develop their light square bishop you can infiltrate with your rook, and get fairly sizable advantage.
This is can result in fairly quick and easy victory if your opponent is careless. If they are are careful they will probably spend a lot of time on their moves as most Scandi players are not prepared for this line. Even if they play perfectly Stockfish still gives the position a 0.0 so you aren't even losing. Here is an example of one of my games that resulted in a quick win:
