Early ratings are not reliable. The OP played the Fools Mate against the same opponent 4 times and reached 1000 in bullet. Then his rating went down when he faced other players. I just want the OP to realize that it is not that easy & should learn some different openings if he wants to be a true 1000 elo. Kids learn quickly especially if they have a coach, or else study the lessons available on chess.com or elsewhere.
