Castling is illegal in that position, if you would like to do that why not touch a pawn and then touch their queen?
I hate playing as black, any solution?

In full technicality, it is only illegal if your opponent calls you out on it on his move. Why would any one call you out on castling in that position when you lose two pieces in the process?

Not true. See USCF rulebook on illegal moves.

FIDE handbook E: Appendix A
- An illegal move is completed once the player has pressed his clock. If the arbiter observes this he shall declare the game lost by the player, provided the opponent has not made his next move. If the arbiter does not intervene, the opponent is entitled to claim a win, provided the opponent has not made his next move. However, the game is drawn if the position is such that the opponent cannot checkmate the player’s king by any possible series of legal moves. If the opponent does not claim and the arbiter does not intervene, the illegal move shall stand and the game shall continue. Once the opponent has made his next move, an illegal move cannot be corrected unless this is agreed by the players without intervention of the arbiter.

I just lost another game trying that! The problem starts when white goes off the book! Then I have a bunch of pieces that I can't seem to organize into an attack.
I might post my game in the other forum, I clearly need help where the sicilian is concerned.

Just keep playing until you're comfortable playing black.
Don't even worry about picking specific openings, just trying learning as many main ones as possible.

The Sicilian will avoid most of your 1.e4 ... 2.Nf3 troubles; but then you will have to face the smith-mora and other anti-sicilian lines. Point is chess is dance, sometimes you lead; sometimes you follow. As white you lead first but black is always looking to take that lead from you. And while we can all suggest lines, seems your problems start when you get out of book.
Blacks plan is seldom an immediate counter storm, so you have to look to other positional/ Tactical oppertunities to improve your position. Experiance IMHO is largely the sum of one mistakes, assuming we learn from them; and your getting some experiance now.
Still, Im guessing your a more Tactical than positional player, and so build your black repetoir around that idea. You might begin with,
1.e4 e5 2.Nf3 f5 ... Latavian Counter Gambit. Totally unsound, seldom played at a master level; but quite dangerious to club players unprepared for the reply; and very tactical. I suspect if you do a little homework you'll find you like it.

Sicilian is good for unbalencing the game so you could play for a win. Until perhaps 15-1600+ USCF though, it is just best to stick with good moves and standard play with e5, playing half a tempo down is not that bad.
Play white and give your opponent move odds.
