English Muffin:
Ingredients: (For top photo- Just egg)
1 English muffin
2 eggs
1/2 avocado
Salt and pepper (optional)
(For Left bottom- Smells Fishy)
1 English muffin
Cooked or Raw fish ( I had cooked tuna steak...u can use whatever)
1/2 avocado
Salt and pepper (optional)
(For Right bottom- It be Meaty)
1 English muffin
Sliced meat (We had some thin slices of beef)
1/2 avocado
Salt and pepper (optional)
The How To:
Split your english muffin and toast it. Once finished, spread some avocado on it (I like to make mine thick). Choose toppings:
For egg: You can pan fry your egg but I like to take a small sorbet bowl and place my egg in there. It will make your egg the same shape as the english muffin. Whisk the egg and heat in microwave. Watch it so that it does not blow up.
For fish: Just heat up your leftover cooked fish or place down your raw fish. Crack some salt.
For meat: Heat leftover meat or cook some. Lay across avocado.
Note: Salt tastes really good on avocado so I recommend you use it.
Note: This is really healthy due to the combination of carbs, proteins, and good fats.
Note: You can add some cooked onions or bell peppers.
Note: You can have avocado with some Lawry’s (or any brand really) seasoning salt and it tastes good.
Pancakes:
Ingredients:
1/2 cup of milk
1/3 cup of coconut milk (recommended) or regular milk
1 egg
1 1/2 teaspoons of baking powder
1 teaspoon of salt
1 tablespoon of vegetable oil.
Butter
Maple syrup (the real type!) optional
Powder sugar optional
The How To:
Combine all dry ingredients-flour, baking powder and salt. Stir well in bowl. Add in the wet ingredients-egg, milks and vegetable oil. Stir in the middle and then push in the rest of the flour. Stir well.
Heat up your skillet or pan. Once hot, add in a good dollop of butter. Spoon out your batter. Flip pancakes when you see the usual bubbles and when that side is brown. Pancakes are fickle so be careful. While cooking, heat up your maple syrup, melt your butter. Once finished cooking, give your flapjacks a nice dressing of maple syrup and butter. Sprinkle on some powder sugar.
Notes:
You can add in nuts and fruit. Coconut milk is preferred but regular milk is fine. I think you can use nut milk too.
Biscuits:
The Ingredients:
1 3/4 cups of flour
2 1/2 teaspoons of baking powder
1 teaspoon of salt
between 1/2 to 2/3 cups of milk
up to 6 tablespoons of butter (adding more in will give you a nice texture but don't over do it since you're going to use butter on it once it's done) cold is best but soft will work
The How To: 425 degrees
Combine the dry ingredients and stir. Take the butter and with a fork or other cooking instrument. If you have lumps, don't worry. IT"S OK!
Pour in the milk and stir. Flour your counter and dump your dough on it. Knead it and make sure it doesn't stick. Use your rolling pin and roll it out. Don't flatten it! If you want fluffy ones, make sure your rolled out dough isn't flat. It should be around 1/2 in.
Cut out circles with a glass or biscuit cutter. You can just use a spoon and make drop biscuits. Those work. Place on a baking sheet (no parchment needed) and bake at 400 or 425 for 8 minutes or until golden brown. Once down, place biscuits in a bowl and cover it. Enjoy!
Garlic lime chicken:
Chicken- use any body parts. The original recipe which will be used here calls for chicken breasts! You can use wings like I did but be careful in adding doubles here but not doubling something else. I will point those tips out when we get there.
Ingerdients:
1/4 thyme
1/4 chili
1/4 crushed oregano
1/4 salt and pepper
1/4 garlic powder
A dash of turmeric-you don't have to add this in...just my secret ingredient
2 tablespoons olive oil
2 tablespoons butter
1/2 cup chicken broth or chicken stock
3 tablespoons of lime juice
1/3 cup of honey
Medium size pinch of garlic powder
To make:
Combine all spices except for the extra garlic powder into a bowl and shake well. If you're doing chicken wings, doubling it or more will be best.
Coat your chicken pieces with the spices front and back.
Melt butter in the oil in a pan-make sure your chicken pieces can move around with a lot of room.
Place the pieces in the pan and cook for 7 mins on each side.
While pieces are cooking, combine chicken stock/broth, honey, lime juice and extra garlic powder together but don't stir.
Sprinkle a touch of garlic powder on the pieces...
Pour juice into the pan and then stir. You don't want to make the pan look like soup. Just enough juice to coat the bottoms and a tad bit more if necessary.
Cook for 3 or 4 mins and flip.
Finished!!! Ready to serve.
