I won against Judit Polgar (2700), Daniel Naroditsky (2650), Danny Rensch (2500), Kostenuik (2550), and even Vishy bot (2820).

I know bots aren't considered the best for practice, but is beating such bots, considered good?

Depends on how you beated them. Sometimes they play very very strong, sometimes like a completely idiots. Because its hard to program bots to do mistakes correctly (i mean there is positions where any human would make a lot of mistakes, and other positions where nobody who any good would not make)

Chess is a game supposed to be played berween people. Engine is a tool used for finding mistakes in our games. I do not recommend anybody playing against bots. Bots mix engine moves with random absurd blunders. This is not a good practise for playing against humans.

Beating the bot just once can be an impressive achievement, but you should be able to do it some what consistently to really establish your ability to play well against strong bots. One time beating them can be due to a simple blunder by the bot.

For example, vishy bot was losing against you after move 5 and blundered queen at move 13(ish). That doesn't really demonstrate anything.
