Is learning through chess probabilities wise?

I'm improving my chess.  After a game I will review move by move to see where my good and bad moves were and the percentage chance I have for winning at that point.  Obviously, this is calculated by the computer.  Not even a GM can look 20 moves ahead and see whether a small move will truly yield a win or a loss (e.g. should I have advanced my pawn two spaces or one).

I suppose my question is "How helpful is a review of the game move by move in improving your chess?"  Look for patterns rather than specific moves?

You can go move by move.   I find using the evaluation graph makes it easy to spot the key moments of a game.
