if someone says chess is uncool, ask them to play a match against you. Most people think things are uncool if they have not tried it.
Also to your question doesn't everything become uncool if you say it is cool too much?

I agree. I've heard people in the game saying chess is cool to try and promote the game, but I think it's a bit cheesy and makes it sound uncool.
Cool is a wrong word for it. It's not sone random toy to call it cool.
Chess is a sport, art, psychology, science etc cc ..... cool? Well yeah everything is cool if you are 5 years old.
I find the expression 'cool' uncool. I wince when I hear people say it.

When I ran out of cash, I told a stripper chess was cool. I thought she would continue dancing in front of me, but she just walked over to another guy who had cash. So, maybe it's not so cool.
