Knight vs Bishop

Why do they often say that knights and bishops are of the same approximate value? The knights control at most 8 squares, but sometimes as few as 6 or 4 or even 2 when they are close to the edge of the board. Whereas bishops control at least 7 squares but this number can go up to 13! Some Grand Masters prefer bishops to knights, but maybe it is just a vast international conspiracy to conceal  the real value of bishops from the general public and pretend that they are only as valuable as knights?

A bishop could be better, but usually people say a bishop pair is better then a bishop and knight or two knights.

There's tons of books and articles on this topic. I would hazard to say one of the primary issues that determines a knight or bishop being superior would be pawn structure...all else being equal. Anyone that's had a Knight posted up in your front yard with a support point that cannot be removed, WHILE having a Bishop on the same color as your pawns knows the pain. Likewise in an open position where the range of the Bishop amongst other attributes often reigns supreme over the Knight.
