Try Der Bringer free download chess program in which you can set the ELO level. Can also change borad colors etc.

Try GNU Chess.  It is nowhere near as strong as Crafty, and if you are using xboard it's a simple command-line change to tell it to use GNU Chess. Recently I looked at another engine that included a Chess Mentor-like analysis system written in Tcl, but I couldn't get it to compile; you could search Sourceforge if you want to give it a shot.  Alternatively, you could run Fritz or  Chessmaster or whatever Windows chess engine you like under Wine (Fritz 8 works well according to the Wine website).

There is a setting somewhere for difficulty level, click Game then its like settings or something. Easy is still pretty tricky though.

Though there is a bug report saying that chess it too hard and there should be a very easy level.

Also mhtraylor, can you give the link to the chess mentor one please?

It's called Scid. I just looked at it again; you would still provide the engine, but Scid is an integrated database with all the statistics and etc. I should have said Tactics Trainer, because it apparently has those features (judging by the docs, since I never got it working).
