The most annoying piece in the opening is the knight when it checks your king, I cannot castle anymore then

They are so tricky and always fork me in the end game.

If you run into Knight forks on your King and Rook(s) this often, then you could also consider putting the King and Rook on opposite colored squares. A Knight can only fork things on their same color square as each other, so a King and Rook on a different color complex never have to worry about a Knight forking them both on the next move.
Yes. And remember, the Knight flips between dark and light squares. So if it is on a dark square, when it moves it will be on a light square, forking pieces on dark squares! Meaning, on your move pay attention to the coloured square your opponent's knight is on, and double check for forks if you have to put your king and rook on squares of the same colour! (Also, be careful if you move your rook to a square of the opposite colour, just in case the Knight already controls that! 
).
So on your move the potential fork squares are the same coloured squares as the Knight, and the potential "blunder squares" are the squares of the opposite colour.
the pawn's because their is so many of them and they always shut down my lines when i try to activate my pieces
