What exactly is one-minute chess? Does it mean you get one minute per move or is the entire game one minute?

The entire game is 1 minute. It is called bullet chess.

Actually the entire game is a maximum of 2 minutes. Each player gets 1 minute.

Unless it is 30 sec per side, then it is 1 minute.

No, blitz is a little bit longer time control.
