Many engines have been tuned to play more human-like.
I used to have chessmaster gm edition installed on my pc. I still have it kicking around somewhere. I liked how there was several different strengths and playing styles and each was assigned it's own name and personality. I remember one personality that would sac some stuff early in the game, and then start playing perfect moves which made it hard to hold onto the material plus. Others would play pretty solid until the endgame where it would start to have missteps. That program was kinda fun actually. I remember it being a little slow though
Many engines have been tuned to play more human-like. The Hiarcs application is a good simulator, as is the ChessPro app. Play Magnus app is claimed to be tuned to play like Magnus at different ages and seems to plays somewhat differently to other engines.
Amusing is ChessWise3 app on easy. Wonky openings, no strategy or king defence but tactically dangerous. It certainly doesn't play like a human, but is fun to play. (For unknown reasons playing Play Magnus improves my game, maybe because I find it especially challenging.)
