Does anyone have a good recommendation for openings as white?
As long as each move
1. Controls more of the center
2. Doesn't just hang a piece
you're doing fine.
Main line Italian is simple and dependable. Depending on how your opponent plays you can even enter into a fried liver or evans gambit and win by being hyper aggressive. Most people in your rating will have no idea what to do against that, and you can swindle a lot of games very quickly.
If you want something to play in every single match regardless of what your opponent is doing, try the Hippo. There are not many attacking chances with the Hippo but it is very solid, so you will usually be able to reach the middle and end game on par with your opponent.
Really the answer is what ever feels good to play, and what you have fun playing. Openings should make you feel comfortable and safe, and over time you will develop and evolve it by adding new moves and tricks to make it a truly formidable weapon. Kind of like your starter in a Pokémon game.
