OTB Improvement Online?

I have a couple questions (background being that there is not a very thriving chess scene where I am and otb tourneys are sparse) -
1: what is the best time control on this site for practicing classical? Or should I use *cough* the other site?
2: If I want to get better at over the board blitz, my understanding is that time controls work slightly different, ie otb 3+2 is more similar to online 3+0.
What's the best time control online to get better at otb 5+0? 5+5 seems a little excessive - do I just find someone my level and play 5+2?
