When I see footage of folk playing OTB they are always scribbling stuff in notepads.

What are they writing?

Just noting the moves for post match analysis or something more mysterious?

Youre actucally not allowed to do that.  I had some kid fliiping through his 100 game notbook during a game.  needless to say, i had to notfy the TD.  The kid...amazingly couldnt understand hwat the issue was?

Their moves.  I believe it is required in most tournaments.

Chess is a slow game and sometimes players get bored.  And bored people often times doodle -- that's probably what you are seeing.

Wesley So got busted for 'taking notes',

https://www.chess.com/news/view/breaking-wesley-so-forfeited-in-round-9-9186

"He seemed unclear on the specifics of the FIDE Laws of Chess in regards to note-taking," Rich said. "He was under the impression that he wasn't allowed to take notes on his score sheet but that that did not preclude him from taking notes on a separate piece of paper."

The relevant rules are:

8.1b The scoresheet shall be used only for recording the moves, the times of the clocks, offers of a draw, matters relating to a claim and other relevant data.

11.3 During play the players are forbidden to use any notes, sources of information or advice, or analyse any game on another chessboard. (...) The rules of a competition may specify a different, less severe, penalty.

11.5 It is forbidden to distract or annoy the opponent in any manner whatsoever.

11.7 Persistent refusal by a player to comply with the Laws of Chess shall be penalised by loss of the game.

They just write down the moves. Writing anything else is not allowed.

11.5 It is forbidden to distract or annoy the opponent in any manner whatsoever.

Regarding this rule. Surely what is distracting or annoying is subjective. The opponent constantly touching his (own) nose for instance could by annoying for a player, but surely they are not going to tell the guy to stop touching his nose.

^Touching your opponent's nose would probably get you in hot water in a tournament.

Also the semi-slav dutch oven defense is frowned upon I believe.
