We have played a lot of times in unrated blitz. I can tell you I am having exactly the same experience! AFAIK Chess.com is more popular than ever so I have no idea why this would be the case.

I play unrated blitz and used to get paired within seconds. I'm now waiting so long for a pairing that I usually give up, or...go to lichess, where my rating is the same but the pairings are faster. What gives? I've only noticed this within the last 4~ months. My pairing range is set to unlimited and nothing else has changed. I prefer chess.com to lichess, but only when I can actually get a game...
