Pawn promotion

Why do they even have the option to promote your pawn to a rook or bishop? Does anyone ever do it?

yes, you can promote to queen, bishop, rook, or knight. Practically, there's no benefit from promoting to a bishop or a rook, because a queen can target the squares of both. On rare occasions promoting to a knight can be knockout blow. Sometimes the enemy king can be put in check by a newly created knight where a queen wont. As for promoting to bishop or rook, its kind of an attitude thing. Sometimes its phsycological.

Knight: To avoid stalemate or to win (like the above example)

Like somebody mentioned already - Rook and bishop are there to avoid stalemate. 

In fact - it may be possible to set up an example where promoting to a Rook or Bishop may avoid a loss (because it forces you into stalemate).
