A kind is obligatory plural right. So I do agree with people one checkmate in a game after a specific moves sequence but beside that, I would say checkmating with only a knight and the other has a bishop blocking the king's escape square.

It happens quite often. Nakamura checkmated another grandmaster with just a lone knight. More rare would be a checkmate that actually has never happened. Or possibly only once.
How about any mate you missed? Think about it. BTW, I know the common answers but I like to think different.
That would only be the rarest checkmate IF it's only happened once. There are countless checkmates that involve the exact same scenario you described, "requires an extremely specific setup".
It's likely that all of us, at some time, have accomplished a checkmate that in all the history of chess has never been repeated.
