Because capturing hanging pcs can atmost get you to 2300 Blitz, but 2400 needs more than capturing pieces.
We all hang things now and then. With so much happening on the board, especially in blitz, it's easy to move on instinct without blunder-checking first.
Tilt and being distracted are also common factors ...
But taking material is just one small aspect of chess.
We still need to figure out where to develop our pieces, how to create, exploit, or avoid pawn structure weaknesses, how to play with tempo and initiative, how to use (or deal with) outposts, how to blockade or deal with blockades, how to play either side of a minority attack - and so on, and so forth.
The list goes on and on ...
