Lichess is also like that and other websites too so I don’t think there is another solution to your problem other than just live by it. Set your puzzle settings to super expert if you want the hard ones.

Try changing your puzzle Difficulty setting to Hard or Extra Hard.
That said, additional changes are coming to puzzles and ratings very soon.

No you won't get it back. They updated the rating system so that you actually get challenged. You will now earn very little points solving lower rated puzzles and slighly more points solving puzzle at your level. Try it untill you can't progress anymore, that will be your current level.
