My coach always quote me on this, "Do not resign until the end of the game, there's always a chance that your opponent will be in a disadvantage and use that to your advantage. Until the end, even if you win or lose, you did your best." And that's what I always do even if I am losing. Your opponent's statement shouldn't have to reflect on your sportsmanship, it just shows how courageous you are to keep going even if you are losing.
You can resign or play on as you see fit.
If your opponent dislikes timing out, then he should play with increment.
Your opponent should practice the 5 basic checkmates instead of complaining when he cannot checkmate in time.
