That's what chess960 was made to do. By scrambling the setup position very little opening preparation can be done. There may be issues with your idea with one side gaining an advantage from the opening. For example if the opening chosen is a gambit. I don't know whether chess960 suffers the same problem.
Also opening preparation is part of chess. Not everyone enjoys learning it but that's no reason to get rid of it.
