Setups with DGT 2500

I'm having some trouble with manual setups with this great clock.  I know that you need to navigate to the 8th setting, which is manual mode.  But I'm hoping someone can explain how to do the following —

1.  How do I set up incremental time?  I only seem to be able to set up regular time, not Fischer incremental.  

2.  How do I set up sound alerts?  I want to be able to hear when the "flag" falls.

So basically I just want to know how to set up, for example, a time control where White and Black have, say, 5/2 each and a sound alert.

I'd appreciate instructions in the most basic, step-by-step ways!  Never said I was the brightest in my class...  Thanks in advance
